This spread is packed with healthy fats from avocados. The lime juice and tomato provide a good dose of antioxidants in the form of vitamin C.
Serves 2 to 4 people.
Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Dice the onion and tomato into small cubes and finely chop the garlic and fresh cilantro (optional).
Heat coconut oil in a small pan over medium heat. Add the finely chopped onion and garlic and fry until the onions are translucent. Remove the pan from the heat and allow the onion and garlic to cool slightly.
Add the lime juice to the avocado and mash it with a fork until smooth.
Add the fried onion and garlic, tomato, and coriander (if using) to the mashed avocado and mash everything together well.
Season the spread with Himalayan salt and pepper. And, if you like a little spice, you can add a pinch of cayenne pepper.
